Salsa is for lovers

This is cute, but I ate WAY more than this.


When I was pregnant with my daughter I went through a phase of craving all things tomato. Spaghetti sauce, tomato soup, ketchup- I loved it all! One day I had an intense craving for homemade salsa. You know it’s real when you are willing to drag your preggo booty to the store to buy the ingredients to make salsa when you had a jar of Trader Joe’s salsa in your pantry!

Produce is pretty.


I had made salsa from scratch one other time and just kind of winged it on the recipe. Confession: I do that crap all the time! Part of the reason my husband encouraged to start my blog was so that I would start writing down the recipes that he likes! HA! So, I created this wonderful tasting creation (ate half the bowl, thank you very much) and actually wrote down the recipe. I have made it several times since and it has a growing fan base so it’s time to share just in time for Cinco De Mayo!

Fun fact: I named it “salsa is for lovers” because spicy foods can actually be an aphrodisiac.

Pro tip: make it a day ahead and it will taste even better!

Ingredients:

6 roma tomatoes
4 jalapenos
1/2 yellow onion
1 cup (or handful) of cilantro
1 can diced tomatoes
2 tsp minced garlic
1 tsp cumin
1 TBS agave nectar
2 tsp sea salt
2 limes (juiced)

Cut tomatoes into quarters and puree in the food processor. Pour into a large bowl. Then cut your onion into 1 inch pieces throw into your food processor with th cilantro. Pulse until broken down evenly.

I just throw it all in there, no cleaning needed in between!


Then add your can of tomatoes (drained) into the mixture and wait for it…pulse it.
Now jalapeno time:
Mild- slice jalapenos in half, remove all seeds
Medium- slice and remove half of the seeds
Hot- just cut the nasty tops off and throw that whole sucker in there!

This is medium spicy, half the seeds


Then add the rest of the ingredients and blend until all is combined. Pour mixture in with your tomato puree in your large bowl and stir it up! Done. It probably keeps for 3-4 days in the fridge but im not sure because we never have it around that long. Enjoy!
